Quick Lentil Soup

Step 1: In a medium pot combine 2 cups lentils (uncooked), 8 cups chicken or veggie stock, 1 chopped onion, 4 tablespoons tomato paste, 2 cloves crushed garlic, 1 tablespoon ground cumin.

Step 2: Bring to the boil, then reduce heat, cover and simmer until lentils are soft, approximately 30 to 45 minutes. Serve with a squeeze of lemon.
